  1. Prepare the tomatoes

    Cut the tomatoes into small cubes, removing most of the seeds and watery pulp as you go.

  2. Make the sardine salad

    Drain the sardines well and mash them with a fork. Mix in the plain skyr, Dijon mustard, black pepper and salt, then gently fold in the diced tomato.

  3. Toast the bread

    Toast the whole wheat bread until crisp and golden at the edges.

  4. Assemble

    Pile the sardine and tomato mixture over the hot toast and serve immediately.
