Whole spelt flour absorbs water gradually and makes a less stretchy dough than white wheat flour. Stop kneading once it’s smooth enough to roll. If it sticks, lightly dust the rolling pin with flour already on the work surface, and avoid adding extra flour, which would make the dough dry. You can also eventually use oil for rolling; it works very well on both the countertop and the rolling pin.
Main DishesWhole Spelt Piadina with Mozzarella and White Beans

Preparation Steps
Mix the no-rest dough
Drain the mozzarella while you mix the whole spelt flour, salt, olive oil and water into a soft dough. Knead briefly, just until combined, and divide into four balls; no rising or resting is needed.
Mix the fast filling
Heat a large skillet over medium-high heat. Meanwhile, crush the cooked white beans with the tomato passata and oregano using a fork. Thinly slice and blot the tomatoes dry, tear the mozzarella, and keep the spinach, basil and black pepper close to the stove.
Roll and toast
Roll the first dough ball into a very thin round that fits your skillet. Cook in the dry hot pan for 1–2 minutes, until the underside has golden spots, then flip.
Fill and fold in the same pan
Immediately spread a quarter of the bean mixture over one half of the flatbread; top with tomatoes, spinach, mozzarella, basil and black pepper. Fold over, lower the heat to medium-low, cover and cook for 2–3 minutes until the cheese melts and the dough is cooked through.
Repeat and serve
Transfer to a plate and repeat with the remaining dough and filling, rolling each round while the previous one cooks whenever possible. Serve straight from the pan for crisp edges and melted cheese.

Keeping 100% whole spelt dough easy to roll
How to avoid a soggy piadina
Wet mozzarella and juicy tomato slices can soften the bread before it browns. Drain the cheese well and blot the tomato slices and there won't be any issues.
Make it even faster
My goal tonight was to make dinner as quick as possible since I came back from work a little bit later (thanks to train delay - as usuaaaaaaal hAAAAAAAAAAAAAAAAA). I gave the instructions for one pan, but I did cooked with two pans, it's twice the cleaning but it was twice as fast to eat and everyone was grateful for it.
And if you want to push it even further, do it with 4 pans but that's if you're really in a hurry.
Children friendly
As usual, beans are not my kid's favourite. So I blended them with the passata, and it worked like a charm.
