  1. Prepare the pan

    Heat the oven to 180°C (175°C fan). Line a 9 x 5-inch loaf pan.

  2. Mix the wet ingredients

    Mash the bananas in a large bowl. Whisk in the plum compote, chicken eggs and plain skyr until the mixture is thick and mostly even.

  3. Make the batter

    Stir together the lupin flour, defatted almond flour, whole wheat flour and baking powder. Fold them into the banana mixture, then fold in the dark chocolate chips. The batter should be thick but spreadable, with no dry flour visible; stop mixing at that point.

  4. Bake

    Spread the batter in the pan and bake for 35–50 minutes, allowing longer if needed. The top should be set and a skewer inserted into the center should come out without wet batter; the center should reach 93–96°C.

  5. Cool and slice

    Let the cake cool in its pan for 10–15 minutes, then lift it out and cool completely before cutting the loaf into slices.
