Ingredients

Preparation Steps

  1. Heat the oven

    Heat the oven to 220°C / 425°F. Cut the tomatoes into small pieces, slice the sweet red pepper, and slice the white mushrooms.

  2. Toast the bread

    Arrange the whole-wheat bread on a baking tray and toast in the oven for 7 to 9 minutes, turning once, until crisp at the edges. Set aside.

  3. Brown the vegetables

    Heat a large deep ovenproof nonstick skillet over medium-high heat. Cook the white mushrooms and sweet red pepper for 10 to 12 minutes, stirring regularly, until their released liquid has cooked away and browned spots appear.

  4. Make the tomato base

    Add the tomatoes and half of the dried oregano to the skillet. Simmer over medium heat for 12 to 15 minutes, stirring occasionally, until the tomatoes collapse and the liquid looks thick rather than watery.

  5. Add the beans and cheese

    Fold the boiled white beans and cottage cheese through the tomato mixture. Cook over medium-low heat for 2 to 3 minutes, stirring gently, until evenly distributed and warmed through. Scatter the partly-skimmed mozzarella cheese over the surface.

  6. Season the white-bean base

    Season the white-bean base with the salt, oregano and pepper before adding the vegetables; mix well, then taste and adjust before broiling.

  7. Broil and serve

    Switch the oven to high broil and place the skillet under the broiler for 3 to 5 minutes, until the mozzarella is melted and lightly browned in patches. Serve the skillet with the toasted whole-wheat bread.

Mushroom Moisture

The texture is decided before the tomatoes enter the skillet. Let the mushrooms and peppers cook until the liquid they release has evaporated and browned spots appear. Adding tomatoes to a wet pan produces a loose sauce that slips off the toast instead of staying in the skillet where it belongs.

Toast Served Separately

White beans and cottage cheese make the tomato mixture substantial enough to spoon onto bread, while the mozzarella is there for a browned top rather than a heavy cheese layer. Keeping the whole-wheat bread separate from the sauce preserves its crisp edges. Serve soon after broiling, while the cheese is melted and the toast still has some resistance.
