Rice noodles, caramelized cabbage, carrots, and crisp-edged tofu are coated in a golden coconut-peanut sauce built from curry powder instead of curry paste (I didn't have any left haaaa). Lime keeps the rich sauce bright enough to cling to the noodles without becoming heavy.

Preparation Steps
Cook the noodles
Cook the Dry rice noodles according to the packet timing, stopping when they are tender but still springy. Drain well and set aside so they do not keep softening.
Brown the tofu
Pat the Firm tofu dry and cut it into small bite-size pieces. Coat it with Curry powder, maple syrup, and Salt, then fry in Rapeseed Oil over medium heat for 8 to 10 minutes, turning often, until several sides are deep golden and the tofu is firm with lightly crisp edges.
Caramelize the vegetables
Heat the remaining Rapeseed Oil in a wide pan over medium-high heat. Add the Carrot and Cabbage, leave them undisturbed for 3 minutes, then cook for 8 to 10 minutes, stirring every few minutes, until the cabbage has browned edges and the carrots are tender with some bite.
Make the curry sauce
Whisk peanut butter, Ground turmeric, Curry powder, Salt, Soy sauce ,maple syrup, Ground Cumin, Smoked Paprika, Coconut milk and Water in a saucepan. Warm over low heat for 4 to 5 minutes, stirring, until the sauce is glossy, pourable, and thick enough to coat a noodle in a thick, fluid layer; simmer briefly if it is thin, or loosen it with Water if it becomes too thick. Stir in Fresh lime juice after taking the pan off the heat.
Toss and serve
Add the Dry rice noodles, caramelized vegetables, and browned Firm tofu to the sauce. Toss over low heat for 1 to 2 minutes, until everything is evenly coated and hot. Serve & Enjoyyyyyyyyyyyyyy.

Keep the coconut-peanut sauce below a boil
Peanut butter and coconut milk need gentle heat to stay smooth and glossy. A hard boil can turn the sauce grainy, so stop when it coats a noodle in a thick but fluid layer, then stir in the lime juice off the heat. Leftovers keep in a sealed container for up to 3 days; reheat slowly with a little water to loosen the sauce back into a coating rather than a paste.
Thai curry?
If you want a real thai curry, you can skip the curry & curcuma spices and replace it with thai curry paste. It'll be a little be more authentic !

I'll be completely honest, my wife and I loved the meal, but once you pronounce the word cabbage in our house the plate becomes directly undesirable like mexicans for Trump. So for next time I'll skip the cabbage (for my children & the farts that almost suffocated my wife).
